NONNA’S SECRET TOMATO SAUCE
Are you looking for an authentic Italian tomato sauce recipe that brings the true flavor of Italy to your table?
Whether you are a home cook or simply a lover of delicious homemade pasta sauces, this easy Italian tomato sauce recipe is perfect for you!
Made with just five simple ingredients-garlic, olive oil, passata, fresh basil and a pinch of salt-this sauce is a staple of Italian cuisine, known for its rich, natural tomato flavor and velvety smoothness.

SERVINGS:4
INGREDIENTS:
- 2 cups (500 ml) passata (tomato puree)
- 3-4 cloves garlic, finely sliced or lightly crushed
- 3 tbsp extra virgin olive oil
- A small pinch of baking soda (to reduce acidity)
- Salt, to taste
- Fresh basil leaves, a small handful
METHOD:
Sauté garlic: In a medium-sized saucepan, heat olive oil over low heat. Add the garlic slices and cook until they begin to brown. Be careful not to brown them, as they may make the sauce bitter.
Add the Passata: Pour in the passata, stirring well to combine it with the garlic and oil. Bring the sauce to a gentle simmer over medium heat.
Simmer the sauce: Reduce the heat to low and let the sauce simmer gently for about 15 to 20 minutes, stirring occasionally. This will allow the sauce to thicken slightly and the flavors to meld.
Adjust the acidity: halfway through cooking, add a pinch of baking soda to reduce the acidity. You may notice some foaming when you add it; stir gently to blend it in.
Seasoning and adding basil: Taste the sauce and add salt if needed. Add the fresh basil leaves in the last 5 minutes of cooking, tearing them with your hands to release the essential oils.
Serve: Use this sauce immediately with pasta or as a base for pizza, lasagna or other Italian dishes.
