Creamy Ricotta & Pear Cake: A Perfect Fall Dessert

Celebrate the cozy flavors of fall with a creamy ricotta and pear cake, a delightful Italian dessert that combines the subtle sweetness of ripe pears with the creamy texture of ricotta cheese. This cake is both light and luscious, making it the perfect treat for gatherings or a quiet evening at home.

The Perfect Marriage of Italian Ricotta and Fresh Pears

This cake brings together two ingredients that perfectly complement each other: creamy ricotta and sweet, juicy pears. Together, they create a moist, tender cake that showcases the delicate flavors of both.

Origins of Ricotta in Italian Baking

Ricotta has deep roots in Italian baking, where it’s often used to add richness without heaviness to cakes, pastries, and cheesecakes. Traditionally made from the whey leftover from cheese production, ricotta is mild and creamy, lending a light, airy quality to baked goods that’s prized in Italian desserts.

Why Pears Make the Perfect Pairing

Pears, with their soft texture and natural sweetness, make an ideal complement to ricotta. They add moisture and a gentle fruitiness that pairs perfectly with ricotta’s creamy consistency. As they bake, the pears soften even more, becoming almost custard-like, which adds to the cake’s creamy texture.

Seasonal Appeal of This Combination

As a classic fall fruit, pears bring a seasonal charm to this cake. Their warm, autumnal flavor and subtle aroma make this dessert a favorite for cooler months. Adding cinnamon or nutmeg enhances this fall feeling, creating a comforting dessert that feels right at home during the holiday season.

Tips for Achieving the Perfect Texture

  • Don’t Overmix the Batter: Overmixing can cause the cake to become dense. Mix only until the ingredients are combined.
  • Use Room Temperature Ingredients: This helps them blend more easily, resulting in a smoother batter.
  • Bake on the Middle Rack: This ensures even baking, helping the cake cook thoroughly without browning too quickly.

Common Mistakes to Avoid

  • Using Low-Fat Ricotta: Low-fat ricotta can lead to a less creamy texture and a drier cake.
  • Overloading with Pears: Too many pears can make the cake too wet and affect its structure.
  • Skipping the Springform Pan: This cake is delicate, so a springform pan is ideal for easy removal without disturbing the cake.

Professional Baker’s Secrets

  • Brush the Pears with Lemon Juice: A light brush of lemon juice on the pears before baking helps maintain their color and enhances their natural flavor.
  • Add a Cinnamon Sugar Topping: A sprinkle of cinnamon sugar on top before baking adds a hint of caramelized sweetness and an appealing finish.
  • Let the Cake Rest: This cake’s flavors deepen as it cools, so letting it sit for 30 minutes before serving can enhance the taste.

Serving Suggestions and Presentation Ideas

For a beautiful presentation, dust the top of the cake with powdered sugar. Serve with a dollop of whipped cream or a drizzle of honey for added sweetness. This cake also pairs well with a scoop of vanilla gelato or a few fresh pear slices for an elegant touch.

Storage and Make-Ahead Tips

This ricotta and pear cake can be stored easily, making it a great make-ahead dessert.

Proper Storage Methods

  • Refrigerate: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Let the cake come to room temperature or reheat slightly before serving to enjoy its creamy texture.

Freezing and Thawing Guidelines

  • Freeze: Wrap the cake tightly in plastic wrap and foil, then freeze for up to 2 months. Slice before freezing for easy, portioned servings.
  • Thaw: To enjoy, thaw the cake overnight in the refrigerator. Warm it in the oven briefly if you prefer a fresh-from-the-oven taste.

Conclusion

This creamy ricotta and pear cake is an indulgent yet light dessert, perfect for fall’s cool evenings. Combining Italy’s favorite cheese with the sweet, delicate flavor of ripe pears, this cake is a blend of rustic charm and elegance. Serve it at gatherings, share it with friends, or enjoy it as a treat just for yourself—each bite brings a taste of Italian warmth and tradition into your home.

Ricotta & Pear Cake Recipe

Ingredients for the  Base

  • 1/2 cup of sugar
  • 1 cup finely chopped and toasted hazelnuts (preferably without skins)
  • 1/2 cup butter (softened)
  • 1/3 cup all-purpose flour
  • 4 egg whites
  • 1/2 teaspoon baking powder

Ingredients for the Filling

  • 1 2/3 cups heavy whipping cream
  • 1 1/2 cups whole milk ricotta cheese
  • 3/4 cup granulated sugar (adjust based on desired sweetness)
  • Juice of 1/2 lemon
  • 1 teaspoon vanilla extract (optional)
  • 1/2 cup canned pears (or about 4-5 fresh, sweet pears, diced)

METHOD:

Procedure for the cookie base

Chop the hazelnuts finely in a mixer, quickly so the oil does not come out. In a bowl, whip the softened butter with the sugar.

Next add the flour and hazelnuts and mix until fully incorporated.

Whip the egg whites to stiff peaks and add the latter to the butter, sugar hazelnut and flour mixture, mixing well.

Add this mixture to two 10 inches diameter hinged cake pans with baking paper and bake at 350 F for about 20 minutes.

As soon as the surface is golden brown, let cool and take them out of the mold gently.

Procedure for the filling

If you use pears in syrup, cut them into cubes and set aside.

If you use fresh pears, however, cut them into small cubes.

In a saucepan add 1/4 cup of sugar, lemon juice and a knob of butter.

Cook over low heat for until softened.

Set aside let cool and with a strainer remove all the juice released.

Whip the cream with electric whips until stiff and set aside.

Again using the whips, soften the ricotta, add the sugar, vanilla and lemon juice.

Now combine the two mixtures of cream and ricotta and mix until smooth.

Add the pears to the mixture and mix gently until fully incorporated.

Take the first disk of cookie dough that you have previously prepared and allowed to cool, and place it on a serving plate.

Surround it with the ring of the opening-circle mold and pour the ricotta and pear filling over it.

Level well and cover with the second disk, flattening slightly.

Transfer the cake pan to the refrigerator and let the ricotta and pear cake rest for at least 6 hours, my advice as always is to prepare it the day before, it will taste even better.

After the necessary time has elapsed, remove the ring from the opening circle and serve dusting its surface with powdered sugar.

Serve well chilled, try it because it is a real treat 😉
