Italian lentil soup is a hearty and flavorful dish that has been enjoyed in Italy for generations.

  • 1 cup dried lentils
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish



  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery, and sauté until the vegetables are tender, about 5 minutes.
  3. Add the minced garlic and cook for an additional 1-2 minutes.
  4. Stir in the diced tomatoes, vegetable broth, lentils, thyme, oregano, bay leaves, salt, and pepper.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 30-40 minutes, or until the lentils are tender.
  6. Once the lentils are cooked, remove the bay leaves and adjust the seasoning if needed.
  7. Ladle the soup into bowls, garnish with fresh parsley, and serve hot with crusty bread.
