Straight from the heart of Italy, my Nonna’s Peperoni e patate dish embodies the essence of homemade comfort and rustic charm.

Inspired by the sunny flavors of the Mediterranean, this recipe captures the simple joys of fresh ingredients and traditional cooking methods.

INGREDIENTS:

  • 3 bell peppers (red, yellow, or green)
  • 3 medium potatoes
  • 1 large onion
  • 2 tablespoons of olive oil
  • Salt to taste
  • Black pepper to taste
  • Herbs of your choice (rosemary, thyme, oregano, etc.)

 

METHOD:

Preparation of ingredients:

Preheat the oven to 400°F (about 200°C).

Wash and dry the peppers and potatoes.

Remove the seeds and white membranes from the peppers, then cut them into strips or large pieces.

Peel the potatoes and cut them into thick slices or cubes. Peel and slice the onion.

Seasoning:

In a large bowl, toss the bell pepper strips, potato slices, and onion slices with olive oil.

Add salt, black pepper and desired herbs.

Arrange on the baking sheet:

Spread the seasoned peppers, potatoes, and onion on a lightly greased baking sheet, distributing them evenly.

Baking:

Bake in preheated oven for about 30 to 40 minutes, or until potatoes are tender and peppers are lightly browned.

While baking, shake the ingredients occasionally to ensure even cooking.

Serve:

Once the peppers, potatoes, and onion are cooked, you can serve them hot straight from the pan as a side dish or main course.

If desired, you can garnish with other fresh herbs.
