For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Cheesecake Filling:

  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice

For the Blueberry Topping:

  • 1 1/2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cornstarch dissolved in 1 tablespoon water

 

METHOD

1. Prepare the Crust:

  • In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a 9-inch springform pan. Refrigerate while preparing the filling.

2. Make the Cheesecake Filling:

  • In a large mixing bowl, beat the cream cheese until smooth and creamy.
  • Add powdered sugar, vanilla extract, lemon zest, and lemon juice. Mix until well combined and smooth.

3. Assemble the Cheesecake:

  • Pour the cream cheese mixture over the prepared crust, spreading it evenly. Use a spatula to smooth the top.

4. Prepare the Blueberry Topping:

  • In a saucepan, combine blueberries, granulated sugar, and lemon juice. Cook over medium heat until the blueberries release their juices and the sugar dissolves.
