  • 1 1/2 cups graham cracker crumbs

  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice

For the Blueberry Topping:

  • 1 1/2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cornstarch dissolved in 1 tablespoon water



1. Prepare the Crust:

  • In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a 9-inch springform pan. Refrigerate while preparing the filling.
