  • 10.5 oz ditalini pasta
  • 7 oz fresh nettles
  • 1 onion
  • 2 potatoes
  • 1 carrot
  • 1 celery stalk
  • 1 garlic clove
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Vegetable broth as needed

1. Begin by cleaning the nettles, being careful not to get stung by the leaves. You can use kitchen gloves to protect your hands.
2. Finely chop the onion, carrot, celery, and garlic.
3. In a large pot, sauté the chopped vegetables in a bit of extra virgin olive oil.
4. Add the cleaned nettles and let them wilt together with the vegetables for a few minutes.
5. Add the diced potatoes and cover everything with the vegetable broth. Let it cook over medium heat for about 20-25 minutes, or until the potatoes are tender.
6. Meanwhile, cook the ditalini in plenty of salted water according to the package instructions.
