There are some traditional Italian dishes that are now difficult to find with ease, this is one of them.

Yesterday, I made pork rind chops Neapolitan style, an exceptional second course but also a key ingredient for an amazing ragout for a fresh or homemade pasta.

Cotica braciole are pork rind rolls with garlic, parsley, raisins, pine nuts and pecorino cheese flakes, cooked with a simple tomato sauce and, if you like, chili pepper.





  • 4 cleaned pork rinds
  • Parsley, to taste
  • 1 tablespoon pine nuts (10 g)
  • 2 tablespoons raisins (30 g)
  • Salt, to taste
  • 1 can (28 oz) peeled tomatoes (800 g)
  • 3 cloves garlic
  • 1 celery stalk
  • 1 small onion
  • 1/2 carrot
  • Pepper, to taste
  • Extra virgin olive oil, to taste
  • 1/4 cup grated Pecorino Romano cheese (50 g)



The first thing to do, for the optimal preparation of this dish is to clean the pork rinds, which must be manic, I would use a kitchen knife, all the hair should be removed at the root.

Then, rinse them well, dry them and cut them into rectangles, on the inside of the pork rind (the fatty and not smooth one) put grated cheese, pine nuts, raisins (rinsed and soaked in water a little before), parsley and chopped garlic, wrap the pork rind and stick a toothpick in it to hold it in place, if one is not enough, also help yourself with another toothpick or tie it with kitchen twine as I did.

Repeat the process for the other pork rinds.

Meanwhile, chop the onion, celery and carrot.

Add a drizzle of extra virgin olive oil to a saucepan and sauté the chopped celery, carrot and onion; when the latter is golden brown, put the pork rinds in the pan and brown them over a low flame, taking care to turn them so they do not burn.

Only at this point, you can pour the peeled tomatoes (crush them) into the pot and cook for at least 3 hours on a low low flame, the sauce should simmer.

Taking care, always turning the pork rinds, the latter should soak in the sauce and its aroma and above all cook well and soften.

The dish is ready and served!!!
