SERVINGS:6
INGREDIENTS:
- 5 medium potatoes
- 7 oz of mozzarella cheese (well-drained)
- 6 slices of cooked ham
- 1/2 cup of grated Parmigiano Reggiano cheese
- 2 large eggs
- 3 ½ tablespoons butter (divided)
- salt and pepper to taste
- 1/2 cup of breadcrumbs
- extra virgin olive oil to taste
METHOD:
Cook the potatoes:
Peel the potatoes and boil them in salted water until tender (about 25-30 minutes). Once cooked, drain and mash them with a potato masher until smooth.
Prepare the potato mixture:
In a large bowl, combine the mashed potatoes with the butter (which will melt with the heat of the potatoes), grated Parmesan cheese, eggs, salt, and pepper.
Mix well until smooth and combined.
Assemble the cake:
Grease a 9-inch round baking pan with butter or olive oil and coat the bottom and sides with breadcrumbs to prevent sticking.
Spread half of the potato mixture evenly in the baking dish.
Arrange the ham slices, then the mozzarella slices.
Top with the remaining potato mixture, smoothing the surface with the back of a spoon.
Top with breadcrumbs and butter:
Sprinkle the surface with breadcrumbs and add small touches of the remaining butter to help crisp up during baking.
Bake:
Preheat oven to 350°F.
Bake for about 30-35 minutes, or until the top is golden brown and crispy.
Serve:
Allow the pie dish to cool for a few minutes before slicing and serving.
It is delicious either warm or at room temperature.
