Although peas are delicious, it was always a challenge for my mother to get us to eat them.
Therefore, she invented her own version of the classic pasta with peas.
She simply added cooked ham and an egg to it.
The result is fantastic.

- 4 cups of Ditali pasta
- 3 cups of frozen peas
- 1/2 onion
- extra virgin olive oil to taste
- 1 egg
- 4 slices of cooked ham
- salt and pepper to taste
To begin with, we finely slice the onion.
In a frying pan, we add EVO oil and let it sauté.
We add the frozen peas and stir-fry for a couple of minutes on low heat.
We add water until they are covered, and let them cook for about half an hour.
Meanwhile, we finely chop the cooked ham.
Let’s prepare the pot in which we will cook the pasta by adding the water and salt.
When the water boils, we add the pasta and let it cook according to the cooking time on the package.
After the time has elapsed, we drain the pasta and pour it back into the pot, adding some cooking water.
Over low heat, we add the egg and stir gently.
We add the cooked ham and finally the peas.
Our pasta is ready.
