Preparation: 15 minutes

Cooking Time: 1 hour 45 minutes (including bean preparation)

Total Time: 2 hours

Servings: 4

Ingredients

  • ¾ cup dried black beans (or 1 ½ cups canned black beans)
  • ¾ cup dried white beans (or 1 ½ cups canned white beans)
  • 2 medium potatoes, diced
  • 2 medium carrots, sliced into rounds
  • 2 medium zucchini, diced
  • 1 medium onion, finely chopped
  • 1 celery stalk, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 6 cups vegetable broth (or water)
  • Salt and pepper, to taste
  • Grated Parmigiano Reggiano cheese (optional)

Method

Prepare the Beans:

  1. For Dried Beans: Soak black and white beans in cold water for 8 hours or overnight. Drain and cook separately in fresh water for about 1 ½ hours until tender. Drain and set aside.
  2. For Canned Beans: Drain and rinse thoroughly under cold water. Set aside.

Prepare the Vegetables:

  1. Peel and dice the potatoes.
  2. Peel and slice the carrots into rounds.
  3. Dice the zucchini into small cubes.
  4. Finely chop the onion and celery.

Sauté the Base:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and celery, sautéing for 5–7 minutes until soft and translucent.

Cook the Vegetables:

  1. Add the diced potatoes and carrots to the pot. Stir well and cook for about 5 minutes to let the flavors meld.
  2. Pour in the hot vegetable broth (or water) and bring the soup to a boil.
  3. Add the zucchini and reduce the heat to medium-low. Simmer for about 30 minutes until the vegetables are tender.

Add the Beans:

  1. Add the cooked black and white beans to the pot about 15 minutes into the cooking process.
  2. Stir occasionally and continue simmering for another 15–20 minutes to combine flavors.

Final Touches:

  1. Season with salt and pepper to taste.
  2. Adjust the consistency with additional broth or water if the soup is too thick.

Serve:

  • Serve the minestrone hot, topped with grated Parmigiano Reggiano cheese and a drizzle of olive oil if desired.

Tips for Success

  • Seasonal Additions: Enhance the flavor by adding seasonal vegetables such as leeks, peppers, or spinach.
  • Creamy Texture: Blend a portion of the soup with an immersion blender for a thicker consistency.
  • Bean Substitutions: Use kidney beans, chickpeas, or lentils for variety.
