Meat sauce in Italy is an institution.

There are a variety of recipes related to the region of origin.


This is the recipe used by my mother and involves the use of only beef.

SERVINGS:4

INGREDIENTS:

  • 5 tbsp of chopped carrots
  • 5 tbsp of chopped onions
  • 5 tbsp of chopped celery
  • 2 tbsp of chopped parsley
  • 6 oz of tomato paste
  • 1 +1/2 cups of dry red wine (Chianti is good)
  • 15 oz of ground beef
  • 5 tbsp of extra virgin olive oil
  • salt to taste

 

METHOD
In a 4-quart sauce pan, put olive oil, onions, carrots, celery, parsley and salt.
Stir and cook over medium heat.
Add the ground beef and a little more salt.
Cook well.
Add red wine and cook about 5 minutes.
Add the tomato paste and 2 cups of water.
Stir, lower the heat and cover the pot.
Cook until the water is reduced.
