Limoncello: My Nonna’s Calabrese Version

LIMONCELLO: MY NONNA’S CALABRESE VERSION

Grandma’s limoncello I think is tops.

Not only because it is my grandmother’s recipe, but precisely because it is so good that even teetotalers could down a bottle.

We only need four ingredients, but the goodness of it all lies in the quality of the lemons, in this case from my garden, which must be organic, absolutely untreated.

Along with the lemons, you need pure alcohol, granulated sugar and love, lots of love.

Ingredient that needs every preparation.

Below are ingredients, doses and step-by-step procedure.

Why you will love this limoncello recipe

  • Authentic Taste: Made with organic lemon peels, this limoncello captures the true essence of Italian craftsmanship.
  • Simple ingredients: Just four elements-lemons, alcohol, sugar and water-come together to create a vibrant, smooth liqueur.
  • Customizable sweetness: Adjust the sugar to your liking to achieve a personalized balance of sweet and spicy.
  • A burst of citrus flavor: The maceration process extracts pure essential oils from lemon peels, delivering an intense aroma and taste.
  • Perfect for any occasion: Serve it cold as a digestive, add it to cocktails or use it in desserts for a citrusy twist.
  • Made with love: This recipe not only showcases tradition, but also emphasizes care and attention at every stage.
A yellow glass bottle and a halved lemon rest on a small white table by a sunlit sea, with boats and a distant, rugged coastline in the background.

Preparation Time:

  • Prep Time: 20 minutes
  • Maceration Time: 7 days
  • Syrup Preparation and Bottling: 30 minutes
  • Total Time: 7 days and 50 minutes

Ingredients for 1.5 Liters of Limoncello

  • 14 oz (400 g) untreated lemon peels (organic lemons, zest only)
  • 17 fl oz (500 ml) 90-proof alcohol (diluted Everclear, see note below)
  • 2 cups (400 g) granulated sugar
  • 4 cups (1 liter) water

Method

1. Prepare the Lemons:

  • Wash the lemons thoroughly and pat them dry.
  • Use a vegetable peeler or a sharp knife to carefully remove the yellow zest, avoiding the bitter white pith beneath.

2. Macerate the Peels:

  • Place the lemon peels in an airtight container.
  • Pour the 90-proof alcohol over the peels, ensuring they are fully submerged.
  • Seal the container and let it sit in a dark, dry place for 7 days. Shake gently once or twice during this period.

3. Prepare the Syrup:

  • After one week, combine water and sugar in a saucepan. Bring the mixture to a boil, stirring occasionally until the sugar dissolves completely.
  • Allow the syrup to cool to room temperature.

4. Combine and Strain:

  • Once the syrup is cooled, mix it with the alcohol and lemon peel infusion. Stir well to combine.
  • Strain the mixture through a fine mesh sieve or cheesecloth to remove the peels, transferring the liquid into sterilized bottles.

5. Store and Serve:

  • Store the limoncello in the refrigerator or freezer. Serve chilled in small glasses as an after-dinner digestive or in cocktails.

Notes on Alcohol Substitution

Diluting Everclear:
If using 190-proof Everclear (95% alcohol), dilute it to 90-proof (45% alcohol) as follows:

  • Mix 16 oz (473 ml) of Everclear with 0.9 oz (27 ml) of water to achieve approximately 17 oz (500 ml) of 90-proof alcohol.

Tips for Success

  • Choose Quality Lemons: Organic, untreated lemons are essential for their natural oils and absence of pesticides.
  • Avoid the Pith: The white layer under the zest is bitter and can spoil the flavor. Be meticulous when peeling.
  • Syrup Cooldown: Ensure the syrup is fully cooled before mixing it with the alcohol infusion to preserve the limoncello’s vibrant flavor.
  • Bottle Sterilization: Use sterilized bottles to ensure the limoncello stays fresh for longer.

Serving Suggestions

  • Enjoy chilled as a digestive after meals.
  • Use it as a base for cocktails like a Limoncello Spritz or Lemon Martini.
  • Drizzle over desserts such as gelato or panna cotta for a citrusy boost.
  • Incorporate into baking for a unique twist in cakes or cookies.
