These limoncello cookies are very good.

I make them often because I love limoncello and because I think they are really delicious.


Crisp and soft at the same time.

 

 

INGREDIENTS:

  • 2 cups all-purpose flour
  • 1/4 cup  cornstarch
  • 1/2 cup granulated sugar
  • 1/2 cup butter (1 stick), softened
  • 1 egg
  • Zest and 1 tsp of Limoncello
  • 2 teaspoons baking powder
  • A pinch of salt
  • Additional granulated sugar for coating

For the glaze:

  • 2 cups powdered sugar
  • 2 egg whites
  • 3 tablespoons Limoncello

 

 

METHOD:

I poured the sugar with the butter into the planetary mixer, then incorporated the egg and a pinch of salt, then added the lemon zest, Limoncello, flour, starch, and baking powder.

Ready my dough, I kneaded it on the surface and set it to rest in the refrigerator for about an hour.

Meanwhile, I prepared the frosting by whipping the egg whites together with the powdered sugar and Limoncello in a planetary mixer.

Finally from the rested dough I made balls that I dipped in caster sugar, flattened slightly with a spoon and baked at 370 F for 15 minutes.

I dipped the cooled cookies in the icing and put them in the oven again a few minutes to dry.
