  • ½ cup potato starch
  • ¼ cup corn flour (cornmeal)
  • 4 egg yolks
  • 4 egg whites
  • 1 ¼ cups sugar
  • ⅔ cup vegetable oil
  • ⅖ cup milk (100ml) (rounded to ⅓ cup + 2 tbsp)
  • 2–3 tbsp limoncello liqueur
  • 1 tbsp baking powder

For the Limoncello Custard:

  • ⅔ cup sugar
  • ⅓ cup rice starch (or cornstarch as a substitute)
  • 2–3 tbsp limoncello liqueur

For Garnish (Optional):

  • Powdered sugar
  • Candied lemon slices
  • Limoncello drizzle

Method

1. Prepare the Cake:

  1. Beat Egg Whites: In a bowl, beat egg whites with some of the sugar until stiff peaks form. Set aside.
  2. Whip Egg Yolks: In another bowl, beat the egg yolks with the remaining sugar until light and creamy.
  3. Add Wet Ingredients: Gradually add vegetable oil, milk, and 2–3 tablespoons of limoncello liqueur to the yolk mixture, mixing until combined.
  4. Incorporate Dry Ingredients: Sift the rice flour, potato starch, and corn flour, then fold into the wet mixture until smooth.
  5. Combine Egg Whites: Gently fold the beaten egg whites into the batter to maintain its airy texture.
  6. Add Baking Powder: Stir the baking powder into the batter until just combined.
  7. Bake: Pour the batter into an 8-9 inch cake pan and bake at 350°F (180°C) for 45 minutes or until a toothpick inserted into the center comes out clean. Cool completely.

2. Make the Limoncello Custard:

  1. Heat the Milk: Warm the milk in a saucepan over medium heat until just about to boil.
  2. Mix Yolks, Sugar, and Starch: In another saucepan, whisk the egg yolks, sugar, and rice starch until smooth and creamy.
  3. Combine Milk with Yolks: Slowly add the hot milk to the yolk mixture, whisking constantly to avoid lumps.
  4. Cook the Custard: Return the mixture to the heat and cook, stirring, until it thickens.
  5. Add Limoncello: Remove from heat and stir in 2–3 tablespoons of limoncello liqueur. Allow to cool, stirring occasionally to prevent a skin from forming.

3. Assemble the Cake:

  1. Layer the Cake: Once the cake is completely cooled, cut it horizontally into even layers.
  2. Spread Custard: Spread a generous layer of limoncello custard over each cake layer, stacking them as you go.
  3. Finish: Top the cake with the final layer and a thin coating of custard or powdered sugar.

4. Decorate and Serve:

  • Dust with powdered sugar and garnish with candied lemon slices or a drizzle of limoncello.
  • Slice and serve this light, zesty, and indulgent dessert.

Tips for Success

  • Room-Temperature Ingredients: Ensure all ingredients are at room temperature for better consistency.
