INGREDIENTS:

  • 2 cups of all-purpose flour
  • 2 eggs
  • 1/4 cup of sugar
  • 1/4 cup of melted butter
  • Zest of 1 lemon
  • 3 tablespoons of limoncello
  • 1 tsp of of baking powder
  • sugar (for dusting)
  • Vegetable oil for frying
Instructions:
  1. In a bowl, mix the flour with the sugar and baking powder.

  2. Add the eggs, melted butter, grated lemon zest, and limoncello. Mix well until you have a smooth dough.

  3. Cover the dough with plastic wrap and let it rest in the refrigerator for about 30 minutes.

  4. After the resting time, form small balls about the size of a walnut with the dough.

  5. In a pot, heat plenty of vegetable oil to about 340°F.

  6. Fry the castagnole a few at a time, making sure to brown them evenly on all sides.

  7. Drain the castagnole on paper towels to remove excess oil.

  8. Once cooled, dust them with powdered sugar, and they are ready to be enjoyed!
