Lemon shortbread cookies are delicious and able to remind us of summer colors and flavors even in the middle of winter.
Lemon, in fact, the main ingredient of these cookies, gives them a fresh and enveloping taste; but the other aspect not to be underestimated is the citrus scent that spreads throughout the house while baking……a real panacea for your senses!!!
Ideal for our children’s breakfast but also great for tea with friends.
Very easy and quick to prepare, they do not require any manual skills, so they are really good for everyone, from the beginner to the most experienced pastry chef.
A simple shortcrust pastry gives life to wonderful treats.
- 1 +1/2 cup of all purpose flour
- 1 egg
- 1/3 cup of butter
- 1/4 tbsp of baking powder
- 1/2 cup of sugar
- lemon zest to taste
- powdered sugar to taste
The preparation of these lemon shortbread cookies is very simple: start by working the room-temperature butter and granulated sugar in a bowl.
While continuing to process the ingredients, add the egg.
Incorporate the properly sifted flour and baking powder a little at a time, without stopping mixing.
Continue adding the lemon zest as well: if you love the taste of lemon you can dare a bit more with the amount of lemon zest…and if you like you can also add a tablespoon of limoncello!
Mix the ingredients together well until you get a smooth, lump-free mixture.
Place the dough in the refrigerator and let it rest for about half an hour.
Next, with the dough now chilled, form slightly flattened balls and lay them on a baking sheet lined with parchment paper.
Place the baking sheet in a preheated oven at 350 F for about 15 minutes.
Remove from the oven when the cookies have reached a golden color on the surface.
Sprinkle with powdered sugar.
Let cool and serve your lemon cookies.
