Called in Naples “frittata di spaghetti”, the spaghetti pie, is easy a traditional dish of Campania region and of neapolitan cuisine.
It is a pasta mess that was born as a dish of recovery.
The paste is mixed with fresh eggs, grated cheese,cooked ham and pepper.
There can be various versions of spaghetti pizza pie.
Red one with tomato, or white, even if, the spaghetti pie can be customize to liking.
Many ingredients to be added: peas, sauted mushrooms, bacon, cheese, or with vegetables. In the gastronomic tradition of Neapolitan, spaghetti pizza is a preparation also sold as of street food.
- 17 oz of Spaghetti
- 6 eggs
- 1/2 cup of Parmigiano Reggiano cheese
- 1 cup of cream (optional)
- salt to taste
- pepper to taste
- 2 tbsp of extra virgin olive oil
- 1 tbsp of butter
- 1/2 cup of diced cooked ham (you can use bacon)
First we need to cook spaghetti in plenty of salted water.
In a bowl we put the eggs, Parmesan cheese, cream, salt and pepper and mix vigorously.
In a frying pan we add the EVO oil and butter and stir until the butter melts.
We add the cooked ham and let it brown.
In the meantime, we drain the spaghetti al dente and add it to the pan where we let the cooked ham brown.
We stir vigorously and finally add the egg mixture.
We take the pan and let it finish cooking in the oven for 10 minutes at 390 F.
