Soft chocolate and cocoa cookies like are quick to prepare and require minimal effort.

The dough is made in about 30 minutes and the baking in 15 minutes.

Only an hour or so is lost in waiting for the dough to firm up in the refrigerator so that it is more easily malleable.

The processing can all be done manually.

The chocolate melts in a bain-marie or if you have it take advantage of the microwave.

It just takes a little patience to whip the butter with the sugar and for the eggs to soak in.



Makes about 15 cookies


  • 1 1/2 cups of all purpose flour
  • 1/2 cup of unsweetened cocoa powder
  • 1/2 cup of dark chocolate
  • 1/2 cup of granulated sugar
  • 1/4 cup of butter
  • 2 whole eggs
  • 1 tsp of baking powder
  • a pinch of powdered sugar



Melt the chocolate in a double boiler.

When well melted let it cool to room temperature and set aside.

Mix flour, cocoa and baking powder together.

Whip the butter with the sugar, and when the mixture is fluffy, add the beaten eggs in 3 batches.

Pour in the melted chocolate and continue to process until fully blended.

Add the mixed powders and incorporate with a spatula.

Pour into a bowl and let firm for 1 hour in the refrigerator.

Break off pieces on the 2 oz, shape the cookies and roll them well in powdered sugar.

Place them on a baking sheet lined with parchment paper and bake at 350 F for 15-20 minutes.

Remove from the oven and let cool.
