  • 14 oz penne pasta
  • 10.5 oz crumbled sausage
  • 14 oz mozzarella cheese, diced
  • 2 cups tomato puree
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 cup grated Parmigiano Reggiano cheese
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)
  • Butter or oil for greasing the baking dish



  1. Preheat the oven to 350°F. Bring a pot of salted water to a boil and cook the penne according to the package instructions, but drain it a few minutes before the recommended time. Drain and set aside.
  2. Preparation of the sauce: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until golden brown. Add the crumbled sausage and cook until browned and cooked through. Add the tomato passata and red pepper flakes (if using). Let it simmer for about 10 minutes, then remove from heat.
  3. Assembling the baked pasta: In a large bowl, mix the cooked penne with the sausage and tomato sauce. Add half of the diced mozzarella and half of the grated Parmesan cheese. Mix well to evenly distribute the ingredients.
  4. Assembly: Lightly grease a baking dish with butter or oil. Pour the pasta mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining diced mozzarella on top and sprinkle with the remaining grated Parmesan cheese.
  5. Baking: Bake the pasta in the preheated oven for about 25-30 minutes, or until the cheese on top is melted and slightly golden.
  6. Serving: Once baked, let the pasta rest for a few minutes before serving. Garnish with freshly ground black pepper, if desired, and serve hot.
