The one I am giving you today is the Traditional Minestrone Recipe that I have been cooking forever!


It is an easy and even quick preparation.

If you want you can add potatoes, zucchini or other vegetables.

INGREDIENTS:

  • 1 onion
  • 2 carrots
  • 1 celery stalk
  • 1 cup of peas
  • 6 cherry tomatoes (diced)
  • 2 cups of Ditali pasta
  • extra virgin olive oil to taste
  • salt to taste
  • Parmigiano Reggiano cheese to taste

 

METHOD

Pour extra virgin oil into a pot and add finely chopped onion.

Let’s slice all the other vegetables and add them; add the tomatoes last because they will take a short time to cook.

We add 2 cups of water and let it cook for about 40 minutes with a lid on.

We adjust the salt and let it cook for another 10 minutes.

Meanwhile, we cook the pasta.

Pour the soup into a dish and add the pasta.

Sprinkle with Parmesan cheese and… enjoy.
