Limoncello cookies are simple, fragrant pastries that can be made in no time.
These crumbly and delicious shortbread cookies are ideal for breakfast or a snack, to accompany with a cup of tea, or to serve as an after-dinner dessert.
They are perfect in any season, when you are craving cookies that taste fresh and smell irresistible.
The preparation is really simple: just pay attention to the baking, as the cookies should be lightly browned. But here’s how to prepare them.
Makes about 24 cookies
- 4 cups of all purpose flour
- 7/8 cup of sugar
- 2/3 cup of butter at room temperature
- 2 eggs
- 4 tbsp of limoncello liqueur
- 5 tsp of baking powder
- superfine sugar to taste
- icing sugar to taste
In a large bowl, sift the flour; add the sugar, butter, eggs, limoncello and baking powder.
We mix vigorously with our hands until the dough is smooth.
In two bowls we put the caster sugar and powdered sugar.
We take a piece of dough and knead it with our hands, forming a ball.
We roll the ball first in superfine sugar and then in icing sugar.
We prepare a baking pan lined with baking paper and place the balls in the pan.
We bake in a static oven at 350 F for about 20 minutes.
