If you like eggplant, this recipe is great.

You can make delicious rolls for your family.


 

 

SERVINGS:4

INGREDIENTS:

  • 1 eggplant
  • 3/4 cups of mozzarella cheese
  • 6 sliced of cooked ham
  • 1 clove of garlic
  • 1/4 cup of Parmigiano Reggiano cheese
  • 2 cups of tomato puree
  • pepper to taste
  • extra virgin olive oil to taste

 

METHOD

Wash the eggplant and remove the ends.

Cut it lengthwise into thin thin slices.

Take the mozzarella and cut it into small cubes.

Take the eggplant slices, lay a slice of cooked ham and a bit of cut mozzarella on top of each slice, a teaspoon of Parmesan cheese and a sprinkling of pepper.

Roll them up on themselves and pierce them with toothpicks to keep them rolled up.

Take an ovenproof dish, add a drizzle of oil, lay the rolls in it and add the tomato puree with a little finely chopped garlic.

Bake in the oven for 15 to 20 minutes at 350 F.
