I used to be fascinated by them when I saw them in the bakery counter in front of the house.

They really look like little peaches all red.


CUSTARD FILLED SWEET PEACHES in this version are really special and beautiful to present. let’s make them now, you will see how beautiful they are!

 

 

Makes about 15 sweet peaches

INGREDIENTS:

FOR THE PEACHES

  • 8 cups all-purpose flour
  • 7 oz of butter
  • ¾ cup + 1 tablespoon granulated sugar
  • 4 eggs
  • Juice of 1 lemon
  • 0.88 oz (or about 2 ¼ teaspoons) fresh yeast
  • About 3 cups milk (use as much as the dough absorbs)
  • 1 small glass (about 2 tablespoons) Sambuca liqueur

For the Soaking Syrup (Bagna):

  • 2 cups water
  • 1 cup granulated sugar
  • 1 glass (about ½ cup) Alchermes liqueur (you can substitute with Marsala, Campari, Brandy)

For the Pastry Cream (Crema Pasticcera):

  • 2 cups milk
  • ¾ cup granulated sugar
  • 4 egg yolks
  • ¼ cup + 1 tablespoon cornstarch
  • Lemon peel (from one lemon)
  • 1 tsp of vanilla extract

Additional Ingredient:

  • Granulated sugar for coating
  • candied cherries

 

 

METHOD:

Prepare the peaches

Combine the eggs, liquefied and warm lard, sugar dissolved in a tiny bit of water, and lemon juice with the flour.

Start the process, adding the milk a little at a time.

Add the yeast dissolved in a tiny bit of warm milk.

When the dough begins to bubble, it is almost ready.

It is allowed to rise until doubled in volume.

Baking sheets lined with baking paper are prepared.

To make the shapes, grease your hands with vegetable oil, take a piece of dough and squeeze it into your fist.

The ball will form in the gap between your thumb and forefinger.

Adjust for size; I do it by eye.

They need to rise a second time, until doubled.

Bake at moderate heat (350 F), as soon as they take color they are ready.

Prepare the custard

You prepare the custard as usual, mixing all the ingredients and letting them thicken on the gas.

Turn off and let the custard cool covered with plastic wrap.

Prepare the syrup

Pour 2 cups water and 1 cup sugar into a saucepan and bring to a boil a few minutes, turn off and let cool.

When the syrup is cold pour in the alkermes, alternatively marsala is fine.

Soak peaches in the syrup, spread cream in one half, then roll them in granulated sugar.

Garnish with candied cherries.
