“S”  cookies are delicious desserts that melt in your mouth.

They are quick to prepare and great for a snack accompanied by tea or juice, even for a mouth-watering breakfast or if you get a craving for something good.


“S” cookies  are made of whipped shortbread and worked with a whisk until smooth.

In fact, to make these tasty pastries you need the sac à poche with a star-shaped nozzle.

They are great to enjoy in the classic version or with one half of the cookie dipped in melted dark chocolate.

 

 

Makes about 25 cookies

INGREDIENTS:

  • 7 tbsp of butter
  • 2 cups of all purpose flour
  • grated zest of 1 lemon
  • 1/2 tsp of salt
  • 1/2 cup of sugar
  • 2 eggs

For decoration:

  • 1+1/2 cups of dark chocolate

 

METHOD:

  • In a bowl, place the butter (cut into pieces), salt and sugar  and the grated zest of 1 lemon. Begin blending.
  • In a separate bowl, beat two whole eggs, and add half of them to the bowl while continuously blending.
  • Combine 1 cup of all-purpose flour and blend, then add the remaining eggs and the other 1 cup of flour, continuing to blend.
  • Transfer the entire mixture to a pastry bag with a star-shaped nozzle of about 0.47 inches (12 mm). Line a baking sheet with parchment paper and create “S” shapes.
  • Put the cookies in the refrigerator for 5 minutes. Meanwhile, melt the dark chocolate in a double boiler.
  • After 5 minutes, preheat the oven to 340 F and bake the “S” shaped cookies for 15 minutes.
  • Once baked, remove them from the oven and let them cool.
  • Now, dip the cookies halfway into the melted chocolate and let them cool on a rack for about 2 hours.
  • At this point, your chocolate-dipped “S” shaped cookies are ready to be served.
