Ingredients for croissants:

  • 4 cups of all purpose flour
  • 1 cup of milk
  • 1/3 cup sugar
  • 1 sachet (2 1/4 teaspoons) of active dry yeast
  • 1 pinch of salt
  • 7 tablespoons butter
  • 1 egg for egg wash

Ingredients for the custard:

  • 2 cups milk
  • 4 egg yolks
  • 3/4 cup sugar
  • 1/3 cup whole wheat flour
  • Lemon zest
  • Vanilla extract (optional)
  • black cherries (for garnish)
  • powdered sugar


1. Start by preparing the dough for the croissants. Dissolve the yeast in warm milk and add a teaspoon of sugar. Let stand for 10 minutes.
2. In a large bowl, mix the flour with the sugar and salt. Add the yeast and milk mixture and knead until a smooth dough forms.
3. Add the chopped softened butter and knead the dough until smooth and elastic.
4. Form into a ball, cover with kitchen towel and let rise in a warm place for about 2 hours, until doubled.
5. Meanwhile, prepare the custard. In a saucepan, bring the milk with the lemon zest and vanilla (if using) to a boil.
6. In a bowl, beat the egg yolks with the sugar until light and fluffy. Add the sifted flour and mix well.
7. Pour the boiling milk over the egg mixture, stirring constantly. Put everything back on the heat and bring to a boil, stirring until the cream thickens. Let it cool covered with clingfilm in contact with the cream itself.
8. Once the croissant dough has risen, roll it out into a rectangle and cut it into triangles.
9. Place a teaspoon of custard at the base of each triangle and roll it toward the tip.
10. Place the croissants on a baking sheet lined with baking paper, brush them with beaten egg and let them rise for another 30 minutes.
11. Bake the croissants in a preheated 350 F oven for about 15-20 minutes, until golden brown.

Dust with powdered sugar.

Once ready, let them cool slightly and enjoy your delicious cream-filled croissants!

If you want to get the result similar to the one in the photo, just bake the croissants in the oven first and finally cut them in two and fill them with custard.
