Baccalà Salad is a traditional Italian dish that showcases the delightful flavors of salted cod combined with fresh and vibrant ingredients.

This refreshing salad is a perfect choice for a light and flavorful appetizer or a main course that captures the essence of Mediterranean cuisine.




  • 1 pound (450g) salted cod (baccalà)
  • 2 large tomatoes, diced
  • 1 red onion, thinly sliced
  • 1/2 cup (120ml) extra virgin olive oil
  • 1/4 cup (60ml) red wine vinegar
  • 1/4 cup (15g) fresh parsley, chopped
  • Salt and pepper to taste
  • Olives for garnish (optional)
  1. Soak the salted cod in cold water for 24-48 hours, changing the water several times to remove the salt. Once desalted, drain and pat the cod dry with paper towels.

  2. Cut the desalted cod into bite-sized pieces and place them in a large mixing bowl.

  3. Add the diced tomatoes, thinly sliced red onion, and chopped parsley to the bowl with the cod.

  4. In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, salt, and pepper to create the dressing.

  5. Pour the dressing over the cod and vegetable mixture, gently toss to coat everything evenly.

  6. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.

  7. Before serving, taste and adjust the seasoning if necessary.

  8. Garnish with olives if desired and serve the Baccalà Salad chilled.
