Artichoke Frittata is a mouth-watering recipe that you can prepare as an appetizer, a main course or simply as an appetizer.

It is a great recipe to prepare if you have vegetarian guests or if you simply feel like a light and easy dinner.

INGREDIENTS:

  • 4 eggs
  • 6 medium artichokes
  • 1/2 cup of grated Parmigiano Reggiano cheese
  • 1 clove of garlic
  • 1/2 lemon
  • 1 cup of vegetable broth
  • parsley to taste
  • extra virgin olive oil to taste
  • salt and pepper to taste

 

METHOD

To prepare the Artichoke Frittata, start by cleaning the artichokes.

Equip yourself with a pair of gloves and remove the outer part of the artichoke, the part consisting of the hardest leaves.

Cut off the head of the artichoke by a couple of centimeters with a small sharp knife, then remove the stem as well.

Then proceed to cut the artichoke into 4 equal parts.

Remove the inner part called the stubble and then cut the artichokes into small pieces.

Take a large bowl and fill it with water, squeeze the lemon into it and put in the artichokes.

Take a frying pan and cook the garlic and parsley with a little oil, then drain the artichokes well and put them in the pan for a few minutes.

At this point also add the broth and cook for another 10 minutes.

Meanwhile, take a large bowl and beat the egg with the Parmesan cheese, salt and pepper in it.

Add the artichokes to the bowl as well and mix well.

Take a round nonstick baking dish and oil it, then pour the mixture into it.

Bake for 20 minutes in a preheated oven at 390 F.

Once cooked, take the Artichoke Frittata out of the oven and serve it.

If you want you can also cook the Artichoke Frittata in a pan. In this case you will only need 10 minutes of cooking time.
