Makes 20 Amaretti cookies

  • 2 cups almond flour
  • 1 cup granulated sugar
  • 2 large egg whites
  • 1/2 teaspoon almond extract
  • Confectioners’ sugar for dusting
  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour and granulated sugar.
  3. In a separate bowl, beat the egg whites until they form stiff peaks.
  4. Gently fold the beaten egg whites and almond extract into the almond flour mixture until a smooth, sticky dough forms.
  5. Using your hands, roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  6. Slightly flatten each ball and dust the tops with confectioners’ sugar.
  7. Bake the cookies for 15-20 minutes, or until they are golden brown around the edges.
  8. Allow the Amaretti cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
