Makes 12 servings
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup shelled pistachios, finely ground
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Confectioners’ sugar for dusting
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, bring the water and butter to a boil. Stir in the flour and continue to stir over low heat until the mixture forms a ball.
  3. Transfer the dough to a mixing bowl and let it cool for a few minutes. Beat in the eggs one at a time until the dough is smooth.
  4. Spoon the dough into a piping bag fitted with a large round tip. Pipe 12 mounds onto the prepared baking sheet.
  5. Bake for 30 minutes or until the puffs are golden brown and puffed. Remove from the oven and let them cool completely.
  6. In a mixing bowl, whip the heavy cream until stiff peaks form. Gently fold in the ground pistachios, powdered sugar, vanilla extract, and a pinch of salt.
  7. Cut the cooled puffs in half horizontally and fill them with the pistachio cream mixture.
  8. Dust the filled cream puffs with confectioners’ sugar before serving.
