Country-style stewed green beans are a rustic and wholesome homemade dish that brings out the delicate flavor of these vegetables to the fullest.

As with all stew dishes, you will find an inviting tomato sauce here to accompany crispy slices of toasted bread.

INGREDIENTS:

  • 1 lb. string beans
  • 1 carrot, thinly sliced
  • 1 onion, chopped
  • 1 can diced tomato
  • Basil leaves
  • 5 tablespoons extra virgin olive oil
  • Red pepper (optional)
  • Salt to taste

 

METHOD:

  • In a large fry pan, heat the olive oil over medium heat. Add the onion, carrot, red pepper (if using), and salt. Cook until the onion is translucent.
  • Add the string beans.
  • Add more salt and the diced tomato.
  • Add the basil leaves, cover, and cook for about 30 minutes or until the string beans are tender and reduced.
  • Serve hot as a side dish with Italian bread.
