  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
For the Zabaione Filling:
  • 6 large egg yolks
  • 1/2 cup granulated sugar
  • 1/2 cup Marsala wine
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy cream, whipped to stiff peaks
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, bring the water, butter, and salt to a boil. Add the flour and stir vigorously until the mixture forms a smooth ball of dough.
  3. Transfer the dough to a mixing bowl and let it cool for a few minutes. Then, add the eggs one at a time, beating well after each addition, until the dough is smooth and glossy.
  4. Spoon the dough into a piping bag fitted with a large round tip. Pipe mounds of dough onto the prepared baking sheet, leaving space between each mound for expansion.
  5. Bake the cream puffs for 15 minutes, then reduce the oven temperature to 350°F (175°C) and continue baking for an additional 20 minutes, or until golden brown and puffed. Remove from the oven and let cool completely.
  6. To make the zabaione filling, whisk together the egg yolks and sugar in a heatproof bowl set over a pot of simmering water. Gradually whisk in the Marsala wine and continue to whisk the mixture until it thickens and becomes pale and creamy.
  7. Remove the bowl from the heat and stir in the vanilla extract. Let the zabaione cool to room temperature.
  8. Gently fold the whipped cream into the cooled zabaione until well combined.
  9. Slice the cream puffs in half horizontally and fill each with a generous spoonful of the zabaione cream.
