(Makes 12 cream puffs):
Ingredients:
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup whole milk ricotta cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • Powdered sugar, for dusting
Instructions:
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, bring water, butter, and salt to a boil. Add the flour and stir vigorously until the mixture forms a ball.
  3. Transfer the dough to a mixing bowl and let it cool for 5 minutes. Beat in the eggs, one at a time, until the dough is smooth and glossy.
  4. Spoon the dough into a piping bag fitted with a large round tip. Pipe 12 mounds onto the prepared baking sheet.
  5. Bake for 30-35 minutes or until the cream puffs are golden brown and puffed. Let them cool completely on a wire rack.
  6. In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Gently fold in the mini chocolate chips.
  7. Once the cream puffs are cooled, slice off the top third of each puff and fill the bottom with the ricotta cannoli cream.
  8. Place the top back on each cream puff and dust with powdered sugar before serving.
