Green beans and potatoes frittata is a wholesome, simple and very versatile dish.

You can cook it either in a pan or in the oven, it is great to enjoy hot or at room temperature, and you can serve it as a main course or, cut into squares, it becomes an appetizer or a great accompaniment for an aperitif.


In short, it is one of those multitasking recipes to use when you need it.

 

 

Cooking Time: 20 minutes

INGREDIENTS:

 

– 3 potatoes
– 10 oz of green beans
– 1 red onion
– 6 eggs
– Parmigiano Reggiano cheese to taste
– Extra virgin olive oil to taste
– Salt to taste
– Pepper to taste

 

 

METHOD

Finely chop the onion and wilt it in a pan.

Peel the potatoes and cut them into regular cubes, then peel the green beans and cut them into 3.

Blanch both potatoes and green beans in salted water for 8 minutes, then drain and let cool.

Break the eggs into a bowl, beat them and add the previously wilted onion, green beans, potatoes and Parmigiano Reggiano cheese.

Adjust salt and pepper and mix everything together.

In a nonstick skillet pour a little oil, heat, add the mixture and cook 7 minutes per side.
