Green beans, potatoes, fresh tomato…….

Everything in a pressure cooker ……


And here’s a simple, quick, fragrant and flavorful recipe perfect as a side dish to any main course, but also a one-pot meal for a light and healthy dinner for those on a diet………

 

 

SERVINGS:4

INGREDIENTS:

  • 10 oz green beans
  • 3-4 potatoes
  • 1 shallot
  • 4-5 cherry tomatoes
  • Salt and pepper to taste
  • Olive oil (as much as needed)
  • Fresh basil

 

METHOD:

Peel the green beans.

Peel the potatoes and cut them into fairly even dice.

Peel the tomatoes, plunging them first in boiling water for 2 minutes and then in cold water and cut them into pieces.

Chop the shallot and gently sauté it in a few tablespoons of extra virgin olive oil in a pressure cooker.

Add green beans and potatoes, stir to flavor, add tomatoes, season with salt and pepper, top with a cup of water, close pressure cooker and cook for 10 minutes from hissing.

Vent and use up, uncovered and over fairly high heat, the excess liquid.

Scent with plenty of fresh basil and serve.
