Makes about 15 cookies

INGREDIENTS:

  • 300 grams all-purpose flour (about 2 1/2 cups)
  • 150 grams sugar (about 3/4 cup)
  • 150 grams fresh strawberries, diced (about 1 cup)
  • 1 tsp of vanilla extract
  • 1 egg
  • Juice of 1 lemon
  • 1 packet baking powder (about 2 teaspoons)
  • 100 ml sunflower seed oil (approximately 7 tablespoons)

 

METHOD

  1. In a bowl, pour the sugar, oil, egg, and lemon juice. Mix the ingredients well until the sugar is dissolved.
  2. Add the flour and baking powder. Mix thoroughly, knead well, and finally add the strawberries. The dough will be soft.
  3. Grease your hands with oil and shape the dough into balls of about 40 grams (1.41 oz) each.
  4. Place the balls on a baking sheet lined with parchment paper. Sprinkle the balls with a bit of granulated sugar.
  5. Preheat the oven and bake in a static oven at 180°C (approximately 350°F) for 15 minutes.
