This recipe, passed down for generations in my family, holds a special place in my heart and taste buds.

As the oven preheats, memories of grandma meticulously preparing the ingredients with love and care come to life.

The savory fragrance of garlic, rosemary and onions mingles with the promise of a hearty, comforting meal.

It is a journey back to the days when family gatherings took place around the dining table, laughter echoed in the kitchen, and the joy of sharing a delicious homemade meal created lasting bonds.

  • 4-6 sausages (i use pork)
  • 4 medium-sized potatoes, peeled and cut into cubes
  • 1 onion, finely sliced
  • 2 cloves of garlic, minced (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary (or 1 sprig of fresh rosemary)
  • Salt and pepper to taste

  1. Preheat the oven to 400°F.
  2. In a bowl, mix the cubed potatoes with olive oil, minced garlic, rosemary, salt, and pepper. Ensure that the potatoes are well coated.
  3. Arrange the seasoned potatoes in a baking dish, spreading them evenly.
  4. Finely chop the onion and add it to the baking dish, mixing well with the potatoes.
  5. Make space in the baking dish for the sausages. You can place them on top of the potatoes or around them.
  6. Bake in the preheated oven for about 40-45 minutes, or until the potatoes are golden and the sausages are thoroughly cooked. During cooking, turn the sausages halfway through to ensure even cooking.
  7. Once cooked, remove the baking dish from the oven and let it rest for a few minutes before serving.
  8. Garnish with additional fresh herbs if desired.
