This cake is a celebration of simple but delicious ingredients, blending the creamy texture of ricotta with the nutty essence of almonds.

It is a not-too-sweet dessert perfect for any time of day, from a morning treat to an elegant after-dinner treat.

  • 1 1/2 cups (150g) almond flour
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (113g) unsalted butter, softened
  • 1 cup (250g) ricotta cheese
  • 4 large eggs
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/4 teaspoon salt
  • Powdered sugar for dusting
  • Sliced almonds for garnish
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch (23 cm) springform pan with butter and line the bottom with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the ricotta cheese and continue to mix until well combined.
  4. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  5. Stir in the lemon zest, vanilla extract, and almond extract (if using) until evenly distributed.
  6. In a separate bowl, whisk together the almond flour and salt. Gradually fold this into the wet mixture until just combined. Be careful not to overmix.
  7. Pour the batter into the prepared springform pan and smooth the top with a spatula.
  8. Bake for 40-45 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then release the sides of the springform pan and transfer the cake to a wire rack to cool completely.
  10. Once cooled, dust the top of the cake with powdered sugar and garnish with sliced almonds.
