I hated pumpkin as a child!!!

But my grandmother had a special recipe.

I make this recipe now for my children who love it.

The secret ingredient ?

A potato!








  • 2 cups of Pennette pasta or Ditali
  • 4 cups of pumpkin diced
  • 1 potato
  • 1/2 onion
  • extra virgin olive oil to taste
  • salt to taste
  • Parmigiano Reggiano cheese (optional)



First, we cut the pumpkin into cubes.

We peel a potato and cut it into cubes.

We finely chop the onion.

In a frying pan we put EVO oil and onion and let it brown.

We add the pumpkin and potato.

We stir vigorously and let it brown for about 2 minutes.

Now we add water until covered.

We let the squash and potato simmer for about half an hour.

After the time has elapsed, using a blender we reduce everything to a smooth cream.

Let’s cook the pasta.

We drain the pasta and add the pumpkin cream we have prepared to the pan.

Serve hot and if you like sprinkle some grated Parmesan cheese on top.
