  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups ricotta cheese
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Confectioners’ sugar for dusting
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the ricotta cheese and mix until smooth.
  4. Beat in the eggs one at a time, then stir in the vanilla extract, lemon zest, and lemon juice.
  5. Combine the flour, baking powder, and salt; gradually add to the ricotta mixture, mixing just until combined.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 50-60 minutes, or until the cake is set and a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 15 minutes, then remove the sides of the pan and let the cake cool completely.
  9. Before serving, dust the top of the cake with confectioners’ sugar.
