Servings: 4
Ingredients:
  • 4 cod fillets (6 ounces each)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beer (lager or ale)
  • Vegetable oil for frying
  • Lemon wedges for serving
  • Tartar sauce for dipping
Instructions:
  1. In a bowl, whisk together the flour, baking powder, salt, and pepper.
  2. Gradually pour in the beer, whisking until the batter is smooth.
  3. Let the batter rest for 15 minutes while you heat the oil.
  4. In a large, heavy-bottomed pot, heat 2 inches of oil to 375°F.
  5. Dredge each cod fillet in some additional flour, then dip it into the batter, allowing any excess to drip off.
  6. Carefully place the battered fillets into the hot oil, frying 2 at a time to avoid overcrowding.
  7. Fry for 4-5 minutes, turning once, until the cod is golden brown and cooked through.
  8. Transfer the fried cod to a paper towel-lined plate to drain any excess oil.
  9. Serve the crispy beer-battered fried cod with lemon wedges and tartar sauce on the side.
