Makes about 20 fritters
INGREDIENTS:
For the fritters:
- 2 cups all-purpose flour
- 2 eggs
- ⅔ cup warm milk
- ¼ cup sugar
- 4 tablespoons melted butter
- 2 ¼ teaspoons active dry yeast (or 0.6 oz fresh yeast)
- A pinch of salt
- 1 teaspoon vanilla extract (optional)
- Vegetable oil for frying
For the limoncello cream:
- 1 ¼ cups whole milk
- 3 egg yolks
- ⅓ cup sugar
- ¼ cup cornstarch
- ¼ cup limoncello
- Zest of 1 lemon
For decoration:
- Powdered sugar, for dusting
METHOD:
Prepare the fritters:
Activate the yeast: If using fresh yeast, dissolve it in a little warm milk with 1 teaspoon sugar and let it sit for 10 minutes until it becomes foamy. If using dry yeast, add it directly to the flour.
Prepare the dough:
In a large bowl, mix the flour with the sugar and a pinch of salt. Add the eggs, melted butter and warm milk (with any activated yeast). Mix until a smooth dough forms.
Cover the bowl with a damp cloth and let rise in a warm place for about 1 hour, or until doubled in size.
Form the fritters:
After the dough has risen, take small portions and form into walnut-sized balls. Place them on a floured surface and let them rise again for about 30 minutes.
Frying:
Heat vegetable oil generously in a deep frying pan or deep fryer to 350°F (175°C). Fry the dough balls a few at a time, turning them until golden brown on all sides. Drain on paper towels and allow to cool.
Prepare the limoncello cream:
Heat the milk: In a saucepan, heat the milk with the lemon zest (just the yellow part) until almost boiling. Remove from heat and let steep for 10 minutes.
Prepare the cream:
In a bowl, beat the egg yolks with the sugar until light and fluffy. Add the cornstarch and beat until smooth.
Drain the lemon zest from the milk and slowly pour the milk into the egg mixture, beating continuously.
Cook the cream:
Pour the mixture back into the saucepan and cook over medium-low heat, stirring constantly, until thickened. Remove from the heat and stir in the limoncello.
Allow the cream to cool completely before using it to fill the fritters.
Assembling the fritters:
Filling the fritters: Once the fritters have cooled, use a small knife or pastry syringe to cut a hole in each fritter. Fill each fritters with the limoncello cream using a pastry bag with a small nozzle.
Decorate:
Dust the fritters generously with powdered sugar.
Tip:
Serve the fritters slightly warm to best enjoy the combination of the soft dough and the sweet and flavorful limoncello cream!
