Fettuccine pasta topped with creamy mushroom sauce and black truffle slices, served in a white bowl.

SERVINGS:4

INGREDIENTS:

  • 12 oz fettuccine pasta
  • 10 oz fresh porcini mushrooms (or 1 oz dried porcini mushrooms, soaked in warm water for 20 minutes and drained)
  • 1 small black truffle (about 0.7 oz) or black truffle oil, if fresh truffle is unavailable
  • 1 clove garlic
  • 1 small shallot (optional for a sweeter aroma)
  • 3 tbsp dry white wine (optional, for deglazing)
  • 3 tbsp unsalted butter
  • 3 tbsp extra-virgin olive oil
  • Salt and pepper, to taste

METHOD:

Prepare the porcini mushrooms:

If using fresh porcini mushrooms, gently clean them with a damp cloth to remove dirt. Slice thinly. If using dried porcini, soak them in warm water for 20 minutes, then drain and dry.
Prepare the sauce:

Heat the olive oil and butter in a large skillet over medium heat.
Add the garlic clove (whole, so it can be removed easily) and finely chopped shallots. Sauté for 2-3 minutes until they begin to soften and release their aroma, but without browning.

Cook the mushrooms:

Add the sliced porcini mushrooms to the skillet and cook over medium-high heat for about 5-7 minutes, until they soften and brown slightly.
If desired, deglaze with white wine, allowing the alcohol to evaporate. Season with salt and pepper.

Cook the fettuccine:

Meanwhile, cook fettuccine in a large pot of salted boiling water, following package instructions, until al dente.
Reserve 1/4 cup of the pasta cooking water, then drain the fettuccine.

Combine and serve:

Add the fettuccine to the skillet with the porcini mushrooms, stirring to combine. If the sauce is too thick, add a little of the pasta cooking water to loosen it.
Remove the pan from the heat and grate or thinly slice the black truffle over the pasta, stirring gently to distribute the flavor.

Plate:

Serve the fettuccine in bowls or plates, garnished with another sliver of truffle for added flavor, if desired. Serve immediately.
Serving suggestions
Pair this dish with a fresh white wine, such as Pinot Grigio or Chardonnay, to complement the flavors of the truffle and porcini mushrooms.
