Fagioli e scarole is a hot and tasty soup, typical of Neapolitan cuisine.

A poor recipe belonging to the peasant tradition, it brings to the table all the simplicity and genuineness of the most typical flavors of the Campania region.


It is a rustic and invigorating dish, perfect to restore yourself on a cold winter evening.

All you need to do is accompany it with slices of homemade bread to get a complete and very nutritious single dish.

INGREDIENTS:

  • 2 cups of dried cannellini beans
  • 14 oz of escarole
  • 2 cloves of garlic
  • oregano to taste
  • vegetable broth to taste
  • extra virgin olive oil to taste
  • 1 fresh chili pepper
  • salt to taste
  • pepper to taste

 

 

METHOD

Gather the beans in a container, cover them with cold water and let them soak for 12 hours

After this time has elapsed, rinse the beans under running water and drain them thoroughly

Transfer them to a pot and cover with plenty of water.

Add salt , put on the stove and cook for about 2 1/2 hours.

Once cooked, drain them and keep them aside.

Peel the garlic and slice it.

Sauté the garlic in a saucepan with a drizzle of oil and the chopped chili pepper.

Add the beans and let them season for a few minutes.

Scent with oregano.

Open the escarole and wash it thoroughly.

Cut it into strips.

Add it to the cooking beans.

Pour in the hot broth, until the escarole is covered.

Close the lid and let it cook on a gentle heat for about 20 minutes.

Add salt to taste.

When the soup has thickened, distribute it into individual bowls and season with a grinding of pepper.

Finish with a drizzle of raw oil and serve with slices of toasted bread.

Storage

Beans and endives can be stored in the refrigerator, in an airtight container, for up to 1-2 days.

Freezing is not recommended.
