These wonderful almond-based treats are typical of Sicilian pastries.

Easy to make. Glutenfree and lactose-free.



YIELD: Makes 6 to 8


  • 1 1/4 cup whole peeled almonds
  • 1 egg white
  • 1/2 cup + 1 tbsp  sugar
  • few drops of almond essence
  • orange zest as needed
  • icing sugar as needed.
1. In a coffee grinder or food processor, coarsely grind the almonds.
2. Add the sugar and grind again until you get a fine flour like texture.
3. Transfer the almond flour into a  mixing bowl, add the orange zest and combine.
4. Pour in the egg white.
5. Mix until the mixture resembles a compact dough. Refrigerate for at least 3 hours.
6. Take out the portions of the dough and shape into balls.
7. Roll each ball in the icing sugar and pinch to form the classic shape of dolcetti di mandorle.
8. Bake in a preheated oven at 350 F for 15 minutes.
