As the name also suggests, it is an ideal dish for when you are really desperate and don’t feel like being at the stove.
“Pasta alla disperata” is a reinterpretation of the classic puttanesca that includes the addition of mushrooms and anchovies.
A simple dish to prepare with strong flavors that is sure to enchant you.
Let’s see what is the recipe to prepare it.
- 21 oz of penne or spaghetti
- 2 cups of cherry tomatoes
- 6 tsp of extra virgin olive oil
- 2 onions
- 1/4 cup of black olives
- 1/4 cup of capers
- 1/4 cup of fresh or dried mushrooms
- 3 salted anchovies
- oregano, salt and pepper to taste
In a large saucepan, sauté the onions with half portion of the oil.
Add the peeled tomatoes and let them dry over high heat for a few minutes.
Chop the olives, capers, mushrooms, and anchovies and put everything in a small pan with the rest of the oil.
Add oregano, pepper, salt and tomatoes, and let it cook.
Boil the pasta, drain it and pour it into the sauce pan. Let it season over high heat for a few seconds, stirring constantly. Turn off the heat and serve- enjoy!
