Delizia al Limone (Lemon Delight)  is a relatively young dessert compared to most of those that are part of Campania’s confectionery tradition; originating from the two coasts, Sorrento and Amalfi, it was, in fact, invented in the 1970s.

It takes the form of a small sponge cake coated and filled with cream and lemon cream.


It is made by making a cream puff-type pastry, varying in size according to the area, which, once baked in the oven, is filled with a cream made with milk, flour, egg yolks, lemons, sugar, and cream, and garnished with the same lemon cream and with whipped cream. it is a dessert that should be eaten very fresh and cannot be kept for longer than three hours; it is mostly offered on festive occasions, such as weddings, where it very often replaces the cake.

 

 

 

 

Ingredients:

For the sponge cake:

  • 4 eggs
  • 1 cup (200g) sugar
  • 1 cup (120g) all-purpose flour
  • Grated zest of 1 lemon

For the lemon cream:

  • 3 eggs
  • 3/4 cup (150g) sugar
  • Juice of 3 lemons
  • Grated zest of 2 lemons
  • 1/4 cup (50g) butter

For the glaze:

  • 2 cups (200g) powdered sugar
  • Juice of 1 lemon

Instructions:

1. Start by preparing the sponge cake. Beat the eggs with the sugar until you get a frothy mixture. Add the grated lemon zest and the sifted flour, mixing gently. Pour the mixture into a baking pan and bake at 350°F (180°C) for about 25-30 minutes. Once cooked, let it cool.

2. For the lemon cream, beat the eggs with the sugar in a saucepan. Add the lemon juice and grated lemon zest, and the butter cut into small pieces. Cook over low heat, stirring constantly until the cream thickens. Let it cool.

3. Cut the sponge cake into layers and moisten with a little lemon juice diluted in water.

4. Assemble the cake by alternating layers of sponge cake and lemon cream.

5. Prepare the glaze by mixing the powdered sugar with the lemon juice until you get a smooth glaze.

6. Cover the cake with the lemon glaze and let it cool in the refrigerator for at least an hour before serving.
