This delicious lemon-almond cake is a perfect combination of lemon and almond flavors.

Recipe (10 servings):
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups almond flour
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1/2 cup sour cream
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Lemon Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice
  • Sliced lemons or sliced almonds for garnish
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the lemon zest, lemon juice, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, and mix until just combined.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Lemon Glaze:
  1. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  2. Drizzle the glaze over the cooled cake and sprinkle with sliced almonds.
