These carbonara gnocchi are creamy, hearty, and super easy to make!

Just like pasta carbonara, this simple dish uses minimal ingredients and is the ultimate in comfort food.


Two cornerstones of Italian cuisine thus come together in a single recipe that might turn the noses of purists up.

But cooking is experimentation, and we will still try to be as respectful as possible of the culinary tradition that is brought up with this recipe.

INGREDIENTS:

 

  • 2.2 lbs of Gnocchi
  • 4 Eggs
  • 7 oz of Guanciale
  • 1/2 cup of Pecorino Cheese
  • 1 tablespoon of Olive Oil
  • Salt and pepper to taste

METHOD

1. Cut the guanciale into strips and then brown it in a large pan with a wooden spoon for about ten minutes over low heat.
2. Break the eggs into a bowl, add a pinch of salt, pepper, and grated pecorino cheese. Beat the mixture well with a fork.
3. Cook the gnocchi (if you want to make them at home, here’s the gnocchi recipe) in a pot of boiling salted water; they will be ready once they float to the surface.
4. Drain them and pour them into the pan with the guanciale. Pour the egg mixture over the gnocchi, turn on the heat, and mix quickly.
5. Serve the gnocchi alla carbonara by adding more pecorino and freshly ground pepper on top of each dish.
