This delightful Fig, Almond, and Ricotta Cake is a perfect blend of sweet, nutty, and creamy flavors.

  • 1 cup almond meal
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup ricotta cheese
  • 8-10 fresh figs, halved
  • 2 tbsp honey
  • Powdered sugar for dusting
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together the almond meal, all-purpose flour, baking powder, and salt.
  3. In a separate bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gently fold in the dry ingredients until just combined. Then, fold in the ricotta cheese until evenly incorporated.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Arrange the halved figs on top of the batter, pressing them in slightly. Drizzle the honey over the figs.
  7. Bake for 40-45 minutes or until the cake is golden and a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Before serving, dust the cake with powdered sugar. Slice and enjoy!
