Ingredients:

  • 1 package of ready-made puff pastry (about 1 sheet, approximately 8 oz)
  • 2 cups whole milk
  • 4 egg yolks
  • 1 cup granulated sugar
  • 1/2 cup potato starch (or cornstarch)
  • 1 teaspoon vanilla extract
  • Grated zest of 1 lemon (optional)
  • Powdered sugar for dusting (optional)

Instructions:

  1. Prepare the custard:
    • In a saucepan, heat the milk over medium heat until it just starts to boil. Meanwhile, in a bowl, whisk the egg yolks with the sugar until the mixture becomes pale and fluffy.
    • Add the potato starch to the egg and sugar mixture, stirring well to avoid lumps.
    • Slowly pour the hot milk into the egg mixture, whisking continuously.
    • Transfer the mixture back to the saucepan and cook over medium-low heat, stirring constantly, until the custard thickens.
    • Remove from heat, add the vanilla extract and grated lemon zest (if desired). Let the custard cool.
  2. Prepare the puff pastry squares:
    • Preheat the oven to 400°F.
    • Roll out the puff pastry on a lightly floured surface and cut it into squares of your desired size.
    • Transfer the puff pastry squares to a baking sheet lined with parchment paper.
  3. Assemble the pastry squares:
    • Place a dollop of custard in the center of each puff pastry square.
    • Fold the squares to form a triangle or rectangle, depending on your preference.
    • Seal the edges of the puff pastry with your fingers or a fork.
  4. Bake in the oven:
    • Bake in the preheated oven at 400°F for approximately 15-20 minutes or until the pastries are golden brown and the puff pastry is cooked through.
  5. Serve:
    • Once baked, let the custard-filled puff pastry squares cool.
    • Optionally, dust with powdered sugar before serving.

Now you can enjoy these delicious custard-filled puff pastry squares!
